Hibachi Shrimp & Vegetables

For the hibachi sauce:

1/4 cup soy sauce
2 tablespoons mirin (Japanese sweet rice wine)
2 tablespoons sake (Japanese rice wine)
2 tablespoons sesame oil
2 tablespoons brown sugar
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 tablespoon vegetable oil

For the shrimp and vegetables:

1 pound large shrimp, peeled and deveined
1 zucchini, sliced
1 onion, thinly sliced
1 red bell pepper, sliced
1 cup sliced mushrooms
2 cups cooked white rice
2 tablespoons vegetable oil, divided
Salt and black pepper to taste
Optional: Sesame seeds and chopped green onions for garnish


1. Prepare the hibachi sauce:

In a bowl, whisk together the soy sauce, mirin, sake, sesame oil, brown sugar, grated ginger, and minced garlic until well combined. Set the sauce aside.

2. Sauté the shrimp and vegetables:

In a large skillet or hibachi-style grill pan, heat 1 tablespoon of vegetable oil over medium-high heat.

Add the shrimp to the pan and cook for 1-2 minutes per side or until they turn pink and opaque. Season with a pinch of salt and black pepper. Remove the shrimp from the pan and set them aside.

In the same pan, add another tablespoon of vegetable oil and sauté the sliced zucchini, onion, red bell pepper, and mushrooms until they become tender-crisp. Season the vegetables with a pinch of salt and black pepper to taste.

3. Combine the shrimp, vegetables, and sauce:

Return the cooked shrimp to the pan with the sautéed vegetables.
Pour the hibachi sauce over the shrimp and vegetables, tossing everything together until well coated in the sauce. Cook for an additional minute or two to allow the flavors to meld.

4. Serve:

Divide the cooked white rice among serving plates or bowls.
Top the rice with the hibachi shrimp and vegetable mixture.
Garnish with sesame seeds and chopped green onions if desired.
