Modern Roasted Potato Wedges with Herbed Dipping Sauce


For the potato wedges:
2 pounds (1 kg) red potatoes (4-5 large potatoes), unpeeled
2 garlic cloves, pressed
1/4 cup (60 mL) olive oil
1 tsp (5 mL) dried rosemary, crushed
1 tsp (5 mL) dried thyme leaves
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) ground black peppe

For the herbed dipping sauce:

1/2 cup Greek yogurt (can use low-fat or non-fat for a healthier option)
1 tsp fresh lemon juice
1 tsp fresh dill, finely chopped
1 tsp fresh parsley, finely chopped
1 clove garlic, minced
Salt and black pepper to taste


Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.

Wash the potatoes thoroughly, scrubbing off any dirt. Leave the skin on for added flavor and texture.

Cut each potato into wedges by first cutting in half lengthwise, and then cut each half into 3-4 wedges.

In a large bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, chili powder, dried oregano, dried thyme, salt, and black pepper. Mix well.

Add the potato wedges to the bowl with the oil and spice mixture. Toss the wedges until they are evenly coated with the seasoned oil.

Arrange the coated potato wedges in a single layer on the prepared baking sheet.

Place the baking sheet in the preheated oven and roast the potatoes for about 25-30 minutes or until they are golden brown and crispy on the outside, and tender on the inside. Flip them halfway through the cooking time to ensure even browning.

While the potatoes are roasting, prepare the herbed dipping sauce. In a small bowl, mix together the Greek yogurt, fresh lemon juice, chopped dill, chopped parsley, minced garlic, salt, and black pepper. Adjust the seasoning to your taste.

Once the potato wedges are done, remove them from the oven and let them cool slightly.

Serve the modern roasted potato wedges with the herbed dipping sauce on the side.
